Easy & Quick Quinoa Taco Kale Salad
This is my simple go-to recipe as of late. Even if you’re a little weary of eating kale in its raw salad form, I urge you to just try this. I was a little leery of it’s bitter flavor at first, but when paired correctly and massaged, I def fell in love. This was the start of my love for raw kale salads.
- Kale (massaged)
- 1 Lime
- Home Made Hot Sauce (recipe here) ((If you don’t want to make this, just drizzle with Apple Cider or Distilled Vinegar with a bit of heat, such as cayenne))
- 1 cup cooked Quinoa
For “taco” seasoning (increase recipe proportionally for stronger flavor)
- 1 T Chili powder
- 1 T Cumin
- 1/2 T Paprika
- 1/2 t Oregano
- 1/2 t Garlic Powder
- 1/2 t Onion Powder
- Salt to preference
- Sour Cream
- Tortilla Chips
- Wrap up in Tortillas with Hummus (super yummy)
- Take your cooked quinoa and heat it in a pan over light oil. Seasoning generously with your “taco” seasoning. This will give it a nice crisp texture.
- Toss quinoa with massaged Kale, Juice half a lemon over, and use about 1 to 3 tablespoons of homemade hot sauce (or toss with a white or apple cider vinegar w/ cayenne). Serve with lime wedges and any other things you have lying around! (Avocado, tomatos…)
I’ve noticed that Kale goes VERY well (in my opinion) with spicy and acidic flavors which is why I emphasize a vinegar based “dressing.” The hot sauce acts as the dressing for this salad, but be creative, anything spicy and vinegar based will be yummy.
