Curry Coconut Sweet Potato Soup

I’m not going to regurgitate the recipe here, since I almost completely copied a previous recipe.  I was cooking with a friend, and I don’t tend to venture far off the beaten path when I’m cooking for others…

What I did differently

  • I used Indian Curry Paste, and only 1.5 T.
    My curry paste is concentrated, not sure if that makes a difference. The end result had a plenty strong curry taste.
  • Did not use Peanut Butter
    However I did garnish with Peanuts, and it was a nice flavor contrast.
