Simple but Delicious, Rosemary Sweet Potato Mash

Simple side dish, absolutely delicious and addicting.  Sometimes the easiest things to make can be the most yummy.


  1. 1 large sweet potato
  2. .5 T Rosemary
  3. 1/4 Cup Pearl Onions Chopped (optional)
  4. 1/4 Cup Coconut Milk


  1. Preheat oven to 400F, Wash Sweet Potato and Wrap it in Foil, Bake for an hour, or until tender to a forks poke.
  2. Remove and carefully cut sweet potato in half and scoop out the insides.
  3. Mash or Blend in Food Processor, adding all ingredients together.
  4. Serve!

This is a great side to eat after a meal, it feels rich and delicious like a dessert 🙂 I Doubled this recipe and it made about 4 to 6 side portions.
