Simple but Delicious, Rosemary Sweet Potato Mash
Simple side dish, absolutely delicious and addicting. Sometimes the easiest things to make can be the most yummy.
- 1 large sweet potato
- .5 T Rosemary
- 1/4 Cup Pearl Onions Chopped (optional)
- 1/4 Cup Coconut Milk
- Preheat oven to 400F, Wash Sweet Potato and Wrap it in Foil, Bake for an hour, or until tender to a forks poke.
- Remove and carefully cut sweet potato in half and scoop out the insides.
- Mash or Blend in Food Processor, adding all ingredients together.
This is a great side to eat after a meal, it feels rich and delicious like a dessert 🙂 I Doubled this recipe and it made about 4 to 6 side portions.
